Cook along and make a medieval feast with Tish Dockerty of appleTeme

Pickers and pressers of exceptional apple juice and purveyors of delicious supper clubs, appleTeme are bringing the magic of the Round Chapel Dining Club to the comfort of your own home.

We might not be able to welcome you to the Round Chapel Dining Club in person, but you can recreate the deliciousness from home!

Join Tish Dockerty, live from the kitchen at Ludlow Castle for a step by step cookery workshop. We’ll be cooking the recipe ‘Venison Cobbler, braised red cabbage and roast root vegetables, followed by Baked Quince’, a suitable menu for a sumptuous festive supper for two people. Be inspired by the choice of ingredients, their relevance to Medieval times and the importance of eating local, seasonal and sustainable food. You will be able to interact live with Tish, ask questions and work alongside her following her advice and tips on creating a very special supper for two.

Bookings are still welcome after Wednesday 25th  and you will receive your ingredients, but not in time for the actual session. However you're welcome to join in, watch and ask questions and then cook in your own time.

Tickets available util 5pm Sunday 29th (ingredients will be sent on Monday, so you can watch along and then cook your dish at a later date).

The price includes key ingredients (to be posted to you in advance), the full recipe and obviously the participation for one person per household on the day! You can choose to cook along or just watch and prepare the meal at a later date.

How does it work? Once you have booked the session, we will email you the details with the link for the zoom session, the full ingredient list and recipe, a prep sheet with instructions and equipment list. We will post you the key ingredient parcel Tuesday 25th November with next day delivery.  You will need to source some standard ingredients yourself, but there will be suggestions for replacement ingredients if you cannot find all the items listed.

We ask all participants to do the necessary preparation of ingredients in advance of the session, i.e. the weighing out of raw ingredients and chopping of vegetables. This is so we can all enjoy a smooth and entertaining session together on the day. We will also include suggestions for a wine that you may want to drink with the menu (and possibly a glass whilst cooking!). The meal will be ready approximately 20 minutes after the end of the session, which will run for about an hour and a half. Key ingredient parcel will include:

  • 1 x bottle of Salop Sauce 180g
  • 1 x quince
  • 1 x bag of spices
  • 1 x bottle of medium apple juice 250ml
  • 1 x bottle of mulled apple juice 250ml


Tish Dockerty has been working in the food sector in the renowned foodie town of Ludlow for over 15 years. She manages the Local to Ludlow HQ café, shop and takeaway and the Ludlow Local Produce market where she has the Ludlow Street Café. She also runs appleTeme, making apple juice with heritage apples and orchard and hedgerow fruits, selling into pubs, restaurants and shops in the West Midlands and London. Tish set up and teaches with easy peasy Cookery School for children and adults, is a committee member of Slow Food Welsh Marches, and has cooked with many of the best chefs in the area. Her Local and Seasonal Supper Clubs and events based in appleTeme’s historic premises, and occasional other pop up sites, have attracted a strong following.

Workshop lasts  1.5 hours
